It is Super Bowl Weekend! In honor of the event taking place in NOLA I decided to make gumbo. However, I do not like seafood (which is shocking since I live next to the gulf). I found this recipe in my monthly edition of King Arthur Flour, which if you do not get I would highly suggest you do, looking at all the cooking supplies makes my mouth drool! Technically their gumbo has much more in it, and has biscuts baked on top...but I decided to amend it a tad to make it my own. I will warn you now it is quite spicy if you do not have something to soak it up with (aka rice), so be careful!
{What you'll need: 2 tablespoons cooking oil, 3-5 celery stalks,
1 lbs smoked sausage, 10 ounces cooked chicken breast,
1 teaspoon salt, 1 tbs paprika, 1 teaspoon cumin, 1/2 teaspoon red pepper,
2 cans diced tomatoes, 3 cups chicken broth, 1/4 cup flour}
Slice chicken (I used already cooked chicken).
Dice celery
I used pre cooked sausage.
Set a pan over medium-high heat and add
oil and celery. Cook until vegetables are soft.
Mix spices
Add meat, spices, tomatoes, and broth and bring to a simmer.
Turn the heat to low, stir in flour and simmer for about 30 minutes.
After 30 minutes
Put over rice and serve!
