Fall Recipe: Pumpkin Pancakes

Back when I made my pumpkin chai snickerdoodles, I had half a can of pumpkin leftover...and I looked it up and pumpkin only lasts for seven days when it has been opened. So, I couldn't waste it...I'm too cheap...and decided to make it into pancakes. I've had pumpkin pancakes at First Watch and Kerbey Lane Cafe but never made them myself. But let me tell you, these are super easy to make! Let me know your thoughts — xoxo darling, Hayden.

Pumpkin Pancakes Recipe:

You'll Need:

-1 cup pancake mix
-1/2 cup pumpkin
-1 1/4 cup water
-1 tbsp cinnamon
-1 tsp nutmeg
-1/2 tsp all spice
-1/2 tsp cloves
-1/8 tsp cardamom

Instructions:

1. Put pan on burner at light heat, spray cooking spray on pan.
2. Mix together pancake mix, pumpkin and water in a medium mixing bowl.
3. Add in all the spices and mix together.
4. Put 2/4 cup mix on pan and cook until a little crispy on the edges, flipping as you need. 
5. Make a stack of 'em, squirt some whipped cream on top, drizzle syrup and top with some chopped walnuts. 

Troubleshooting:

These are pretty "spicy" but I like them that way. If you want the pumpkin flavor to come through a bit more, use half the amount of spices I used. Also, they aren't incredibly sweet — because I like to douse my pancakes in syrup — but if you don't do that I would suggest adding 1/8 cup of sugar.
