Back when I made my pumpkin chai snickerdoodles, I had half a can of pumpkin leftover...and I looked it up and pumpkin only lasts for seven days when it has been opened. So, I couldn't waste it...I'm too cheap...and decided to make it into pancakes. I've had pumpkin pancakes at First Watch and Kerbey Lane Cafe but never made them myself. Pumpkin Pancakes Recipe:
You'll Need:
-1 cup pancake mix
-1/2 cup pumpkin
-1 1/4 cup water
-1 tbsp cinnamon
-1 tsp nutmeg
-1/2 tsp all spice
-1/2 tsp cloves
-1/8 tsp cardamom
Instructions:
1. Put pan on burner at light heat, spray cooking spray on pan.
2. Mix together pancake mix, pumpkin and water in a medium mixing bowl.
3. Add in all the spices and mix together.
4. Put 2/4 cup mix on pan and cook until a little crispy on the edges, flipping as you need.
5. Make a stack of 'em, squirt some whipped cream on top, drizzle syrup and top with some chopped walnuts.
Troubleshooting:
These are pretty "spicy" but I like them that way. If you want the pumpkin flavor to come through a bit more, use half the amount of spices I used. Also, they aren't incredibly sweet — because I like to douse my pancakes in syrup — but if you don't do that I would suggest adding 1/8 cup of sugar.
