One of my new years resolutions was to cook something every week. And...it has gone fairly well thus far.
Favorite Meal: Roasted Mixed Potatoes with Spring Herbs & Burrata
These potatoes were incredible! Although, something I discovered this month is that I really don't like dill so I will be leaving that off in the future.
Fun But Complicated Meal: Date Night Rigaton
This dish was delightful. It was super good on a snowy night but it was a little more work than I usually like to put into cooking.
Great Side Dish: Benny's Drunken Crouton & Kale Salad
I got this recipe from the Table Manners cookbook and it was delightful. Very easy and I think it would impress anyone at a party.
The "Oh, I Messed Up Big Time" Meal: Crispy Chipotle Sweet Potato Tacos with Lime Crema

So...I burnt them. Like holy moly did I burn them. Did I eat them? Yes. Was I miserable? Kinda. Basically, don't cook them anywhere near as long as she says to haha!
Meal I Would Make to Impress Someone: Pesto Potato Burrata Pizza with Spicy Arugula

I had never made pizza before and honestly I loved it! I under baked it a bit in the middle but the crust was incredible. And the seasoning (aside from the dill) was super good!
